Serve in your favorite whole wheat burrito (with brown rice) or as a bean dip! This is TOO Easy! Has no oil at all and is not fried. This dish contains about 25 grams of protein!

Ingredients:

1 can Goya Red Kidney Beans

Cumin

1 scallion (green onion)

Salt and Pepper

Instructions:

In a food processor or blender, throw in the can of beans with about 1/2 of the liquid, 1 scallion, 1 tablespoon of cumin, and salt/pepper to taste.

Blend until smooth.

To serve as “refried beans”, transfer mixture into a microwave safe dish and cover loosely. Microwave for

2 -3 minutes and stir well. The consistency becomes exactly like warm and delicious refried beans with NO FRYING!

For a bean dip – serve hot or cold. Serve with crudite, whole wheat tortilla, or whole wheat pita chips.
